Cauliflower is a vegetable in the same family as broccoli, kale and cabbage. It is often combined with other vegetables to make a delicious salad. It can also be consumed raw by itself, or with cheese. Care must be taken not to overcook this vegetable (2-3 minutes) to maintain its crispy texture. Cauliflower is an excellent source of Vitamin C, Dietary Fibre and Folate.
